Wild Rice Salad with Dried Cranberries

This is based on an Ayurvedic recipe that is wholesome and as you’ll see from the combinations, really unusual. The sweetness from the cranberries sets the whole dish off, offsetting the raw vegetables in a surprisingly refreshing way. A nutritious and satisfying meal.3 cups water,1/2 teaspoon salt,3/4 cup wild rice,1/2 cups dried cranberries,1 tbs oil,1 cup French or green beans cut in 2-inch lengths,1/2 cup finely chopped tomatoes,1/2 cup chopped cucumbers,1/4 cup finely chopped coriander,1/4 cup oil,1/4 lemon juice,1/2 clove chopped garlic (optional) salt & pepper.Bring the Water and salt to a boil. Stir in the wild rice. Cover and simmer for 30 minutes. Stir in the Cranberries, re-cover, and simmer until the water is absorbed and the rice is tender. Allow to cool to room temperature. Meanwhile, heat the oil in the a large skillet. Add the oil (and optional garlic)  and cook until the beans are crisp tender. Allow to cool to room temperature. Gently toss the wild rice, beans, tomato, cucumber, coriander and lemon juice and toss. Season to taste with salt and pepper                 .100_0988.JPG
